Pop Pop’s Graham Cracker Cookies

Growing up, I have memories of a sweet Nana and Pop Pop. They weren’t my related family, but our very dear family friend’s grandparents. You might remember’ Shelley’s Colorful kitchen + Midwest Front Patio – Pop Pop was her step father.
So, today I am sharing one of my favorite EASY recipes, Pop Pop’s Graham Cracker Cookies.
One of the things I remember most about Pop Pop was his graham cracker cookies. He would ask us what color we wanted and we could pick any color in the rainbow for the frosting. It was every child’s dream
Looking back, these were the easiest cookies to make, but at the time I didn’t think anyone could make them but him. They seemed so special coming to us in our pre-choosen frosting color in a big gallon sized ziplock baggie.
Now that I’ve got two kiddo’s of my own, these simple but tasty treats popped into my mind. I’ve added a few small twists to make it my own, but in just a few moments, you could be making fun memories for your little ones, too.
Graham Cracker Cookie recipe
Break Graham Crackers in half
Pop Pop used cinnamon sugar graham crackers, but this mama only had regular plain ones on hand. My favorite brand is Honey Maid. No matter what type of graham cracker you have, grab one and break it in half.
Add frosting
Next, using a butter knife, load it up with frosting. I used cream cheese flavored because that’s one of my very favorite frosting flavors. But any flavor will work here!
Also if you are wanting to add a little interest, you can add a few drips of food coloring to your frosting to make it yellow, mint green, soft blue or any other color you would like.
Once your frosting is on the knife, slather it onto the Graham Cracker. Then, take the other half of your cracker and place it on top. Your graham cracker cookie dessert is now done!
I added a few Starburst Candy Corn’s to the top for some extra color. It was a BIG hit with the kiddos and I may or may not have had a “few” myself.
Graham Cracker and Frosting Cookies
Make a fun treat for your children using simple pantry ingredients of graham crackers and delicious frosting.
Ingredients
- Cinnamon and Sugar Graham Crackers
- Cream Cheese Frosting
- Butter Knife
- (Candy corn, optional)
Instructions
- Start by breaking your rectangular graham crackers into smaller square shaped pieces.
- Get a generous amount of room temperature cream cheese frosting on your butter knife and apply one side of the graham cracker.
- Press a plain graham cracker on top to create a sandwich type cookie.
- Decorate with additional cream cheese frosting and candy corns for a fun look.
- Eat and enjoy!
- Freeze any you don't eat to save for a later date.

Graham Cracker cookie variations
