Greek Chicken Fajitas

A few weeks ago I found I heart Naptime’s Greek Sheet Pan Chicken recipe and was so excited to try it out.
I decided to not add the potatoes, bell peppers. And then decided to not add the feta cheese until the end. And then, I decided to grill the chicken and use a different tzatziki sauce, as well as add artichoke hearts. Before you know it, I had significantly changed the recipes and it turned out SO wonderful – I immediately shared with my mom and sister.
Greek Chicken
Typically when someone is preparing Greek styled chicken it has so many amazing fresh herbs, lemon juice and lots of extra virgin olive oil. This awesome recipe is no different, which is why it’s perfect for a delicious summer cookout meal.

Who is with me that summer time calls for easy “make as you like” type meals? We are big fans of fajitas in our home because there are numerous fresh veggies, grilled meats and each person can add the sauces they like best. That’s a win for me.
- Marinaded Chicken
- Artichoke Hearts
- Red Onions
- Kalamata Olives
- Shredded Lettuce
- Diced Tomatoes
- Cucumbers
- Feta Cheese
- Tzatziki sauce (I love this recipe if you want to make your own)
- Warmed Pita Bread
Making Greek Chicken Fajitas
Chicken
The first thing to do when making Greek Chicken Fajitas is you need to marinate the chicken. I marinated mine for about 6 hours, but as long as you let it marinate for at least an hour you should be good.
Follow the recipe below for what to put in the marinade.
Once the chicken is marinaded and it’s time to grill, set the grill to medium heat for 20-25 minutes, turning every 5 minutes or so. Grill until the internal temperature is 165F.
Sheet Pan Veggies
On a baking sheet, add thinly sliced red onion and grape tomatoes. Drizzle a little marinade over the top and toss. Bake for 15 minutes. Then add Kalamata olives and artichokes and bake again.
This will give your veggies a golden taste……
Fresh Veggies
Dice fresh tomatoes, cucumbers and romaine lettuce. Prep feta cheese in a bowl.
Pita Bread
Lightly grill the pita bread about 20 or 30 seconds each side just to warm it up.
Eating Greek Chicken Fajitas
Now that all the ingredients have been grilled, chopped, diced and prepped… it’s time to eat this delicious Greek dinner!
Set out the pita, feta cheese, grilled chicken, fresh tomatoes and cucumbers in dishes. Place the sheet pan veggies in a bowl. Grab your Tzatziki sauce and your appetite!

Ingredients
- 1/3 cup Olive Oil
- Juice of 1 Lemon
- 2 teaspoons of Green Seasoning
- 1/2 teaspoon Kosher Salt
- Ground Black Pepper, to taste
- 4-6 boneless Chicken Breast
- 1/2 Red Onion, thinly sliced
- 1 cup Cherry Tomatoes
- 1/4 cup Feta Cheese
- 1/4 cup Kalamata Olives
- Cucumber, diced
- Artichoke hearts
- Pita bread, warmed
- Tzatziki Sauce
Instructions
- In a large bowl, whisk together olive oil, lemon juice, Greek Seasoning, salt and pepper.
- Toss the chicken with the marinade and allow to sit at least one hour.
- Preheat over to 425F.
- On a baking sheet, place sliced red onion and tomatoes. Drizzle a little marinade over top. Toss well until coated and bake for 15 minutes.
- Add olives and artichokes and bake another 15 minutes or until the veggies are softened.
- Dice tomatoes, cucumbers and lettuce for sides.
- Pour feta into a bowl and warm pita bread.
- Grill chicken and cut into small pieces.
- Make your pita fajitas and enjoy!
